    BEAUTI is more than physical attractiveness. BEAUTI surrounds us in many forms.

    BEAUTI portrayed inside and out. BEAUTI at every age, in every stage of life. BEAUTI of this incredible world we live in. BEAUTI of emotions and feelings of the moment. BEAUTI that cannot be put into words.

*Cody + Laura* Engagement

Pink pants.  Her hot pink pants.  One glance into the court where she was playing squash and she’s had his attention ever since!  That was when this country guy met this city girl.

I had a blast photographing their engagement session, capturing the positive, happy spirited couple they are.  A nice mix of laughs, gentle + fun teasing and romantic snuggles + moments.  And I’m so glad that we have warm weather again!  Even the first time I met these two they were so open and honest about their relationship, I think we entertained everyone in the coffee shop!  He managed to talk her into buying her first pair of cowboy boots just for their photo session, and brought along flowers and other props that are special to their time spent together.

You two are sweet and fun, it’s awesome to have met you both…I am looking forward to photographing your wedding day in September!

*Prairie Crocus*

Our spring weekend at the farm really felt like spring when we went for a drive out in the pasture and found crocuses, usually the first flower to bloom in the prairies.  I love finding signs like this that winter is over and spring is here!  I couldn’t believe how tunnel visioned I got as we were driving and I’m hoping to catch a glimpse of light purple in the grass because when I looked up there were so, so many little clusters of pretty, delicate crocuses.  Growing in the same area of the pasture we used to always look in as little girls.  But this time I didn’t run home with a handful to put in a vase.

*Exploring…At The Farm*

Whoa, the last few weeks have FLOWN by!  A lot keeping me busy, both with photography and personal.  Which is great but I haven’t had a chance to blog!

We took a few days off around this past weekend and went out to visit my parents and sister’s family, visiting friends along the way.  It was great but never feels like we get away for long enough to fit in everyone we’d like to visit and everything we would like to do.  I will just add tho, the only bad part (long story short version)…on the trip home I managed to get a massive goose egg + cut on my forehead.  Yah, really brutal, but funny at the same time.  Something I really, really hope will not happen to those of you that have sessions coming up!

I love springtime at the farm.  Warm, sunny days.  New calves running around.  Grass turning green.  Farmers talking of getting out in the fields to plant.  That spring freshness in the air.  And the anticipation it all brings for summer fun!  I went springtime exploring in the pasture…

*Gluten Free ~ Cheesecake*

Eating gluten-free has been a part of my life for a few years now…and I’m happy to say I don’t find it a hardship.  It’s not a hardship because I feel so much better than I did eating gluten.  And there are so many gluten-free options available now that can be substituted for the regular foods.  Anyhow, I am asked often about my gluten intolerance and my favorite recipes, it seems like more and more people are developing this sensitivity.  I thought I could occasionally share a recipe and tips here.

Dessert is probably the most challenging, I find anyhow.  I came up with this cheesecake crust from parts of a couple recipes, the almonds add such a nice flavor.

CHEESECAKE CRUST:

  • Combine 1 cup gluten free flour mix and 1/4 cup brown sugar (or cane sugar)
  • Cut in 5 Tbsp cold butter
  • Stir in 1/2 cup nuts (I chopped up slivered almonds)
  • It doesn’t need to be precooked but I did for just 10 minutes at 350.

(The gluten-free flour mix that works great in my baking experience is: 3 cups white rice flour, 1 cup potato starch and 1/2 cup tapioca starch…or there are lots of conveniently pre-packaged flour mixes available)

And I have to add a couple shots of the yummy blueberry syrup that we love to use in our tasty, purple-tinge whipping cream!

*Baby Victoria*

While we were becoming more tired of airplanes + airports with 22 hours travel time, there was excitement at home of this sweet little baby girl being born.  We met her hours after we landed, just a day old!  I went back a week later to photograph her, so tiny and precious and loved.  Our youngest niece.  Congratulations!
