We are just a couple days away from the annual celebration of a day centred around love and affection. I shy away from commercialized holidays but when the focus of February 14th is love I support that as our world can always use more love. Often gifts of chocolates, roses and special cards are given for Valentine’s Day and I want to share a recipe for homemade chocolates with you. These would be well received as a Valentine’s gift and it’s even better to enjoy them all throughout the year! You can pretty much always find a container in our fridge. Instead of picking up boxes of chocolates from the store this year, I hope you will make a batch of these delicious gluten, dairy and refined sugar free chocolates to package pretty for your special people. They are so good!
CHOCOLATE NUT BUTTER FUDGE CUPS
Prepare a muffin pan with liners (makes 2 dozen mini cups). Put 1/2 cup coconut oil (slightly melted but not hot), 1/2 cup cocoa powder, 1/2 cup natural almond butter (or nut butter of choice), 1/4 cup honey and 1/2 tsp pure vanilla in blender. Pulse until smooth and nicely combined. It will be liquid-y. Pour into liners and add your favorite toppings if you wish. We like to use slivered almonds, pumpkin seeds and sea salt. Place pan in fridge for 30 minutes or until fudge has hardened. Store in the fridge – if you don’t eat them all right away!
